20 'specials' for 50 guests? Why we draw the line at dietary requests that are getting out of hand these days.

As a caterer, you’ll surely recognize this. You open the briefing for a party, and the list of allergies and dietary requirements is enormous. At an event of 50 guests, there are sometimes as many as 20 ‘special requests’ these days.


We completely understand: for many guests, a strict diet is not a trendy choice, but an absolute necessity for their health. And precisely because we take this so seriously and do not want to cause anyone any problems, we run into our logistical limits in practice.


At Funky Food Factory, we serve about 7 to 8 different appetizers per person per party. If we have to prepare a 100% safe and complete alternative for every unique, very specific allergy (from fructose and histamine intolerances to certain E numbers) in addition to the known intolerances, it becomes incredibly complex. To guarantee that safety, we sometimes even had to bring in an extra food truck with extra staff. Logistically, that is simply no longer feasible in the long run.


We see that everyone in the sector is searching for the right path in this regard. A fellow caterer of ours recently opted to charge a fee of 35 euros per person for significantly different dietary requirements. A clear approach that undoubtedly creates more awareness regarding the extra time and care such requests demand in the kitchen.


We ourselves are strongly considering changing course in the future.

Vegetarian, vegan, gluten-free, and lactose-free? No problem at all. We continue to make delicious, wholesome alternatives for them with lots of love.

What about all other, very specific diets or allergies? For those, we would only provide very transparent advice regarding which allergens are present in our dishes. This way, these guests know exactly what they can safely eat, but we no longer create completely new, adapted menus for these exceptions.


This approach would give us the necessary peace of mind in the kitchen and the absolute certainty that we are not taking any risks with the health of our guests. This way, we can continue to guarantee quality 100%.
